After a wonderful winter off spent filling my brain with new knowledge and spending time with my hunny I'm headed back to work! In combination with this and the changing seasons my food consumption is switching into summer gear, which is tends to be less heavily monopolized by root veggies and towards a more raw one which helps aid in digestion during the craziness that is summer.
During this time there tends to be a lot more fresh cut veggies for easy eating - not to mention all the freshness that will be overflowing from our garden and the market (which I conveniently work at throughout this season). There's a lot of raw food, smoothies, finger foods and massive salads that make digestion easier and helping to keep energy levels up because it's not all going into the processing of my recently consumed meal. Plus! It's hot - who wants soup when it's hot? Not I my friends, not I.
Hence the reason for the hummus! A friend of mine made beet hummus a while back and I thought 'Hmm...if it can be done with beets, why not carrots!?' And there was no turning back from there. I decided to take the savory route by adding garam masala along with some freshly roasted garlic. If you're drooling on your computer it's okay. There is no judgement here.
It's also perfect for getting some extra veggies in and adds a nice twist to the tried and true classic hummus.
And now! Insert tasty hummus recipe!
1 cup cooked chick peas
3 medium-sized carrots
1/2 head garlic
2 tsp garam masala
2 tsp olive oil
Enough water to help blend til smooth
salt and pepper to taste
Roughly chop and roast the carrots with 1 tsp oil and 1 tsp garam masala, salt and pepper. Toss the garlic in with it, don't peel it though. Keep those tasty juices in there!
Once they are soft let them cool (and now peel it free) and blend everything else together in a food processor until the consistency is to your preference.
Cut veggies, buy crackers or grab a spoon and go to town! Perfect for that backyard BBQ you're attending with all the current lovely weather.
It's good to venture from the path regularly travelled because how else will you ever discover new adventure. This recipe is a perfect way to meet in the middle. I hope you all enjoy.
